To keep proteins at food-safe temperatures, certain Breader Blender Sifter models can be ordered with a built-in ice bath or cold pan. The ice bath includes a valve and tube to drain excess water to a nearby drain. The cold pan comes in sets of two; after overnight storage in a freezer, a pan will stay cold for 4-6 hours at room temperature.
Enhance workflows and add additional workspace with optional storage add-ons. The back panel affixes to the back of the BBS auto sifter and allows for the hanging of bun pan racks and other process accessories. The over shelf is an angled and ergonomic shelf, permanently built into place on the BBS. It enables the placement of proteins and batters within easy reach of the operator.
The BBS comes with a standard sifter brush and screen. However, specific recipes or prep processes may call for alternate brushes or screens with different perforations. Brushes are available to handle battering styles ranging from water to thick buttermilk batters. Screens can be ordered to accommodate breading from fine flour to large spice flakes or bread crumbs.
